How Shade Growing Changes the Flavor of Matcha

Most tea plants get full sun right up until harvest. Matcha plants don't. About three to four weeks before picking, the plants get covered, traditionally with straw mats, more often now with synthetic shade cloth, and that deliberate darkness is doing more than just protecting the leaves. It's rewriting their chemistry.
What the plant does when the light drops
Cut off from full sunlight, the plant responds by producing more chlorophyll, chasing whatever light it can still get, which is part of why shade-grown matcha comes out so vividly green. At the same time, the plant slows down and holds onto more L-theanine, an amino acid that would otherwise convert into catechins, the compounds behind a lot of green tea's natural bitterness. Less conversion means less bitterness and more of the round, savory quality tea people describe as umami.
Why that matters for taste
Put those two effects together and you get a matcha that's smoother and less sharp than tea grown in full sun. The higher L-theanine content doesn't just cut bitterness, it actively contributes flavor of its own: a savory depth that balances out the plant's natural sweetness rather than fighting against it. That's the difference between a matcha that tastes flat and grassy and one that tastes layered.
