Afterglow: an introduction to kurokoji fermented tea

Most tea falls into one of two buckets: oxidized, like black tea, or unoxidized, like green tea and matcha. Afterglow is neither. It's fermented, which means the leaf isn't just reacting with oxygen, it's being actively transformed by a living microorganism, the same basic idea behind how rice becomes sake or soybeans become miso.
The microorganism doing the work here is kurokoji, or black koji, a mold with centuries of history in Japanese fermentation. Pu-erh is probably the only fermented tea most people have even heard of, and it gets there through its own microbes and its own aging process. Kurokoji is a different path to a similar idea, and it's one we're just about the only ones applying to tea at all.
What actually happens to the leaf
We start with tea leaves that have already been steamed, the same first step used across a lot of Japanese green tea. Instead of stopping there, the leaves are inoculated with kurokoji and fermentation takes over. Over the following days, the mold breaks down compounds in the leaf that steaming and oxidation alone would never touch: sugars, proteins, and tannins all get reworked into something new.
This isn't a quick process, and it isn't a passive one either. Temperature, humidity, and timing all have to be managed closely, because kurokoji left unchecked will take the leaf somewhere unpleasant just as easily as it'll take it somewhere great. Getting it right is most of what makes Afterglow hard to replicate.
Once fermentation is finished, the leaves are dried, then stone-ground into the same fine powder we use across the rest of the catalog.
What it actually tastes like
The fermentation strips away most of the grassiness and bitterness you'd associate with green tea, and replaces it with something deeper: earthy, a little sweet, with a rounded, almost caramelized finish that lingers longer than a typical cup of tea has any right to. It doesn't taste "fermented" in an off-putting way. It tastes finished, like something that was given the time it needed.
Caffeine comes out lower than matcha too, since a good amount of it breaks down during fermentation. That's part of why Afterglow tends to land in the evening slot for people rather than the morning one.
Why this is worth your attention
Fermented tea powder barely exists as a category, and kurokoji fermentation specifically is almost never applied to tea outside of what we're doing with Afterglow. We didn't set out to make a novelty. We set out to see what tea could become if we gave it the same fermentation treatment we already trust for sake and miso, and Afterglow is the answer.
